Is there anything better than having something you’re prepared at home in your kit bag to munch on after your swim? We don’t think so. These Berry Muffins are fiendishly moreish - but, with plenty of protein and fruit, you can tuck in without the guilt. And these Protein Oatie Bowls are too delicious to keep just for breakfast, so feel free to indulge any time of day. 

Get ready to replenish your energy stores.

Arla Skyr Berry Muffins
You‘ll need:
2 cups plain flour
1 cup caster sugar
2 ½ teaspoons baking powder
½ tsp fine salt
180 mls Arla skyr natural yoghurt
2 tbsp fresh lemon juice
180mls vegetable oil
2 tbsp lemon juice
180ml vegetable oil
2 large eggs
2 tsp vanilla essence
2 tbsp fresh lemon vest
1 cup of fresh raspberries

Topping:
25g melted butter
40g plain flour
40g granulated sugar
40g zest of 1 large lemon
1 handful of oats

Instructions:

  1. Set your oven to 220C and line a cake tin with12 muffin cases. 
  2. Mix the butter (melted), oats, sugar and lemon zest together. Put this to one side - you’ll need it later for your topping. 
  3. Then mix all the dry muffin ingredients together in another bowl. 
  4. Separately, whisk your wet ingredients - the yoghurt, lemon juice, oil, vanilla and zest together. Then add the dry ingredient mix to the wet ingredients slowly and carefully, folding everything in gently with a wooden spoon or spatula.
  5. Finally, mix the raspberries in until they’re spread throughout the mixture. 
  6. Plop the batter equally into the 12 cases, then sprinkle a little of the crumb mixture on top of each one. 
  7. Pop the tray into the oven and bake for 9 minutes at 220. Then turn the heat down to 180C and bake for an additional 25 minutes. 
  8. Once the muffins have cooled, transfer them to a wire rack to cool. 
     

Arla Protein Oaties
You’ll need:
1 handful of granola
150g Arla protein strawberry yoghurt
1 handful of strawberries
1 handful of blueberries
1 handful of nuts (your choice)

Instructions:

  1. Spoon some yoghurt into a bowl or small Tupperware pot if you’re eating on the go. You want to create a satisfying layer of yoghurty goodness!
  2. Then top with a layer of strawberries, blueberries, granola and nuts. 
  3. Keep going, alternating between yoghurt and your fruity, nutty mixture. Aim for a nutty layer on top. Hey presto - a protein-packed snack!
